Duck Egg Custard

Baked Custard

2 large duck eggs

1/3 cup maple syrup

pinch of salt

 

Whisk these in bowl.

Whisk in 2 cups hot milk gradually.

Add 1 tsp vanilla

Strain into pitcher or measuring cup for easy pouring.

Pour into 5 custard cups or ramekins.

Bake in bain-marie (water bath) in 325 degree oven for 50 - 60 minutes until set but still quivery in the center.

Chill.
