Stuffed Zucchini Boats

Preheat oven to 400 degrees. Halve big zucchini lengthwise and use a spoon to scoop the flesh out of zucchinis.

Then you can stuff it with pretty much anything.

Some ideas - Mushrooms, beef, pork, chicken, red peppers, onions, sausage, garlic, fresh herbs, dried herbs, corn, whatever you have that sounds like it would fit with the other things you’re using.

Sauté any meat you are using. Also sauté onions, peppers, mushrooms, chopped tomatoes. Add cooked rice, cooked pasta, cooked dried beans..

Put zucchini shells on greased baking sheet. Add stuffing until it is heaping. Make sure you season with salt and pepper. Top with cheese - mozzarella, Parmesan, cheddar, etc. Bake for 25 minutes or so until zucchini is tender and cheese (if you used it) is melted and browned.

You can make different combinations, for instance,

Italian - sausage, tomato, mushroom, pesto

Mexican - corn, dried cooked beans, peppers, Jack cheese, jalapeños

Indian - cumin, coriander, cauliflower, tomato, yogurt

Here’s a great chance to experiment with what you have. Use herbs and spices. Have fun with it. Happy zucchini boating!
